Questions For Our Bakers

What breads are a "good source of fiber"?

A “good source of fiber” is defined as 2.5 to 4.9 grams per serving.  Our products which are a “good source of fiber” are:

Beckmann’s: German Farmbread (round), Honey Whole Wheat, Pure Rye.

Whole Grain Natural Breads: Apple Cinnamon Swirl, Old Fashioned Whole Wheat, Oat Bran, Hearty 9-Grain, California Black Bread, Marble Rye.

Which of your products have honey?

Beckmann’s:  Honey Whole Wheat, Swiss Three Seed, Sweet Deli Rolls

Whole Grain Natural Breads: all

Do you make any vegan breads?

All of our sourdough breads are dairy and egg free, except for the Asiago Cheese Sourdough.  However, some of our breads are made with honey.

How long can I keep a loaf of bread in the freezer?

Freezing is an excellent way to prolong the shelf-life of our breads.  Keeping bread frozen is a natural preservative which prevents mold and staling.  We recommend using your frozen loaf within 6 weeks.

Can/Should I keep bread in the refrigerator?

Refrigerating bread can deter mold on bread but it speeds up the staling and drying out of the loaf.  We recommend freezing or storing at room temperature over refrigeration.

What is a wheat berry?

A wheat berry is another name for a whole grain of wheat.

How long does your bread last?

Our breads are made with natural ingredients and without preservatives or dough conditioners which keep bread soft.  Most of our breads are delicious for 4 to 5 days, although they can last longer.  There is a sell-by date on the bag closure.

Do you have any organic breads?

Yes.  Pure Rye is 100% organic.  French Whole Wheat, Honey Whole Wheat and Francese loaf are 98% organic and made with organic flour.

Do you offer tours of your bakery?

Group tours can be arranged by appointment.  Tuesday and weekends excluded.

What days do you deliver bread to grocery stores?

We deliver bread every day except Wednesday and Sunday.  We have fresh bread available on Wednesday and Sunday seasonally at farmers' markets throughout the San Francisco Bay area.

Does Beckmann’s Bakery make breads without sugar?

Yes.  None of Beckmann’s breads are made with sugar, although some are made with honey.  Whole Grain Natural Breads are made with cane sugar and honey.

Do you make a wheat free bread?

Our Pure Rye is wheat free and made with freshly ground (milled on site) organic rye grain.

Do you have a salt free bread?

All of our breads contain a small amount of natural sea salt.  Salt is important in the natural fermentation process and is necessary for water absorption by the flour or grain.

Where can I buy your pies or pastries?

Beckmann’s Bakery pies,  pastries and cookies are available at our farmers' markets and through our website.

What farmers' markets do you go to?

We attend markets several days a week, please click on this link for full list.

I threw away the bag to my par-baked bread, how long do I bake it?

Bake 7-10 minutes at @ 450 degrees.  For best results don’t cover the bread.  Place it directly on rack or pan and sprinkle it with a little water before baking.

What is a slow rising process?  Why does Beckmann’s use it?

“Slow rising” refers to the way bread is fermented.  Our slow-rising doughs have small amounts of leavening (either starters or yeast) and can take between 4 and 14 hours to rise.  Over time the grain breaks down and releases its natural sugars.  This process develops a unique flavor-profile.

What does ‘refreshing’ bread mean?  How do I do it?

When bread ages, the starch hardens and seems dry.  To resoften unsliced bread, sprinkle the crust/surface with water and put in a hot oven for a few minutes.  450 degrees F for  2-5 minutes.  Watch it closely.  Warm bread will taste “fresh” again.  To refresh sliced bread, wrap in foil and reheat to soften.  Do not refresh bread in a microwave.
